The Bloom of Sustainability: Introducing Greenaration
Elevating Plates with Edible Flowers and Herbs from Dubai
At Teible, we continue to celebrate the abundance of locally sourced ingredients that shape our unique culinary journey. Building on our philosophy of sustainability and seasonality, this fourth issue of MAGAZINE I highlights a remarkable farm that embodies our farm-to-table ethos. Allow us to introduce Greeneration—a visionary enterprise in Dubai dedicated to cultivating fresh edible flowers and herbs that add color, flavor, and elegance to our dishes.
Nestled in the heart of Dubai, Greeneration is redefining how the region grows and sources specialty botanicals. Their expertise lies in cultivating delicate and vibrant edible flowers, along with fragrant herbs that bring a floral and herbal flourish to any plate. Committed to responsible farming and modern sustainability measures, Greeneration leverages innovative techniques and local resources to produce ingredients that are as fresh as they are environmentally friendly.
Greeneration’s cultivation methods blend time-honored botanical knowledge with efficient water usage and minimal waste practices—particularly significant in the region’s arid climate.
By employing controlled environments and advanced irrigation systems, the farm ensures robust plant growth without compromising on water conservation. Every petal and leaf is carefully harvested at its peak, capturing the essence of their natural aroma, flavor, and vivid color. This meticulous attention to detail resonates with our core principles at Teible, as we endeavor to bring only the finest local ingredients to your table.
Edible flowers come in a range of hues—from soft pastels to vibrant jewel tones—and carry subtle yet distinctive flavors that can add depth to sweet and savory dishes alike. Whether peppery, citrusy, or mildly sweet, each variety of edible flower is carefully selected to complement and elevate our menu’s offerings at Teible.
The farm’s aromatic herbs—from basil and mint to less common varieties like lemon thyme or purple shiso—lend distinct layers of flavor to our dishes. The intensity and fragrance of freshly harvested herbs heighten our guests’ culinary experience, striking a pleasing balance between flavor and presentation.
At Greeneration, flowers are grown with rigorous quality control, ensuring they remain free from harmful chemicals. Hand-picked at dawn to preserve their freshness and delicate scent, these blooms capture the essence of nature’s vitality. Their pristine condition translates to unparalleled vibrancy on the plate.
Growing delicate botanical varieties in Dubai’s extreme climate is no small feat. Greeneration employs high-quality soil blends, precision irrigation, and protective greenhouse environments to shield plants from harsh temperatures and maximize their aromatic potential. Through continuous research and collaboration with agricultural experts, the farm refines its methods season by season to remain aligned with sustainable practices.
Since Greeneration’s edible flowers and herbs are largely used as garnishes at Teible, we invite you to reimagine how a delicate finishing touch can transform a dish. Below is a fresh, herb-forward recipe that accentuates the beauty and flavor of locally sourced botanicals.

In this issue, we had the pleasure of preparing a few key questions to gain deeper insights into Greeneration’s farming philosophies and challenges.
What motivated you to specialize in edible flowers and herbs in Dubai’s climate?
It was love at first sight with Dubai, and when we came here for vacation we realized
speaking with locals that all the food was imported and they would’ve appreciated
locally produced products.
Which varieties of flowers and herbs are the most sought-after among chefs in the UAE?
The key for this product is the freshness, so producing daily with high quality local cow milk, and buffalo milk imported from Italy we manage to maintain the Italian standards.
Can you share the most significant challenges you face in ensuring both quality and sustainability?
The greatest challenge is to standardize a high quality hand-made product that is made fresh everyday.
How does Greeneration incorporate eco-friendly practices and resource management in day-to-day operations?
Sustainability is very important for us, although it is very hard in a production facility, and we are working with our free zone to make our facility more sustainable as possible. We have already approached new suppliers to have a more sustainable packaging.
How do you envision the future of local farming in the UAE, particularly for specialty produce like edible flowers?
We are currently almost ready in Saudi Arabia, and as per the products we always look to create something innovative.
At Teible, our guests delight in the subtle flavor and elegant appeal that Greeneration’s blooms and herbs contribute to our dishes. From lightly garnished salads to intricately plated mains, the feedback has been overwhelmingly positive:
“I recently tried the Burrata Salad, and it was a refreshing experience from start to finish. The creamy Burrata cheese was the star, its rich texture balancing beautifully with the peppery arugula. The citrus segments added a burst of brightness, pairing surprisingly well with the kumquat compote, which gave an intriguing, slightly tart sweetness. The citrus dressing tied everything together, bringing a zesty note that elevated the entire salad. And finally, the sourdough – perfectly toasted – added a satisfying crunch, making every bite complete. Highly recommend this dish if you’re looking for a light yet flavorful salad with a twist!”
Edible flowers and herbs offer more than just visual appeal. They often contain beneficial compounds like antioxidants and vitamins. Herbs, in particular, can enhance flavors without the need for excessive salt or fats, promoting a balanced diet. By incorporating these locally grown botanicals, Teible ensures each dish is not only pleasing to the eye but also nourishing to the body.
Greeneration’s commitment to conserving resources aligns with Teible’s Michelin Green Star ethos. Through efficient water systems and environmentally conscious cultivation, they minimize their carbon footprint while maximizing crop yield. By sourcing these delicate ingredients locally, we reduce transport emissions and maintain the freshest quality possible.
As we conclude this fourth issue of MAGAZINE I, we hope you’ve enjoyed discovering how Greeneration’s edible flowers and herbs enhance our culinary creations at Teible. Their dedication to sustainable farming mirrors our own drive to reshape Dubai’s dining landscape with locally sourced, minimally wasted, and seasonally inspired fare.
Join us again next month, when we delve into another facet of the UAE’s rich tapestry of local producers. Until then, may the delicate blossoms and aromatic
